Roasted Tomatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 lbs plum tomatoes, cut in half
  • 2 tablespoons extra virgin olive oil
  • 8 garlic cloves, cut in large chunks
  • 2 teaspoons dried basil
  • 1 pinch coarse salt
  • 1 pinch ground black pepper
  • 1/2 teaspoon white sugar

Recipe

  • 1 toss all ingredients together. pour a roasting pan. arrange tomatoes cut side down. roast in preheated 375°f oven for 20-30 minutes.
  • 2 remove skins and place tomatoes in a bowl. drain oil from pan into bowl, and add additional olive oil to cover. store, tightly covered, in refrigerator up to 4 weeks.
