Ingredients
- Servings: 6
- 3 lbs plum tomatoes, cut in half
- 2 tablespoons extra virgin olive oil
- 8 garlic cloves, cut in large chunks
- 2 teaspoons dried basil
- 1 pinch coarse salt
- 1 pinch ground black pepper
- 1/2 teaspoon white sugar
Recipe
- 1 toss all ingredients together. pour a roasting pan. arrange tomatoes cut side down. roast in preheated 375°f oven for 20-30 minutes.
- 2 remove skins and place tomatoes in a bowl. drain oil from pan into bowl, and add additional olive oil to cover. store, tightly covered, in refrigerator up to 4 weeks.
