Roasted Tomatoes On Goat Cheese

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups grape tomatoes (halved lengthwise)
  • 2 shallots (sliced)
  • 2 tablespoons extra virgin olive oil
  • 2 goat cheese (4 ounce each)
  • 2 -4 tablespoons balsamic glaze (recipe follows)
  • 2 tablespoons fresh parsley (or basil)
  • salt & pepper (to taste)

  • 1 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon black peppercorns (crushed)
  • 1 tablespoon fresh rosemary (chopped)

Recipe

  • 1 preheat oven to 450°f.
  • 2 toss halved tomatoes & sliced shallots with olive oil.
  • 3 arrange in a single layer on parchment paper on a sheet pan.
  • 4 roast in centre of oven for about 10 minutes or until it begins to caramelize.
  • 5 season with salt and pepper to taste and let cool.
  • 6 to make balsamic glaze pour vinegar into a small saucepan and bring to a boil.
  • 7 lower heat and simmer for 5 minutes.
  • 8 stir in remaining ingredients and simmer for 2-3 minutes.
  • 9 cool and strain into a covered container and place in a cool, dark cupboard where it will keep indefinitely.
  • 10 makes 1/2 a cup.
  • 11 to serve place cheese logs on a dish.
  • 12 top with tomatoes, even warm if you so choose.
  • 13 drizzle with balsamic glaze.
  • 14 garnish with herbs.
  • 15 serve with toasted baguette slices or crackers.
