Roasted Tomato Sauce

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 large tomatoes
  • 1/2 yellow onion
  • 2 garlic cloves
  • 1 cup heavy cream
  • salt, to taste

Recipe

  • 1 heat broiler to high.
  • 2 roast tomatoes, onion and garlic until dark but do not burn, these need to be turned often.
  • 3 let cool.
  • 4 peel tomatoes and reserve any juices.
  • 5 place tomatoes, onions and garlic in a blender and process until pureed.
  • 6 place puree in a medium saucepan and bring to a boil over medium heat.
  • 7 cook for 2 minutes.
  • 8 season with salt to taste.
