Roasted Tomato Herb Sauce

Ingredients
- 2 1/2 lbs plum tomatoes, cut in halves
- 1 leek, sliced
- 1 medium onion, cut in wedges
- 2 medium carrots, cut into 3/4 inch pieces
- 3 garlic cloves, peeled
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried marjoram
- 1/8 teaspoon pepper
- 1/2 cup fresh basil
- salt and pepper
Recipe
- 1 spray a jelly roll pan with cooking spray; arrange vegetables in a single layer on pan. spray vegetables with cooking spray and sprinkle with dried herbs.
- 2 roast at 425 for 40 minutes, or until vegetables are browned and tender.
- 3 process vegetables and basil in a food processor until almost smooth. season to taste with salt and pepper.
