Roasted Tomato Herb Sauce

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 2 1/2 lbs plum tomatoes, cut in halves
  • 1 leek, sliced
  • 1 medium onion, cut in wedges
  • 2 medium carrots, cut into 3/4 inch pieces
  • 3 garlic cloves, peeled
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram
  • 1/8 teaspoon pepper
  • 1/2 cup fresh basil
  • salt and pepper

Recipe

  • 1 spray a jelly roll pan with cooking spray; arrange vegetables in a single layer on pan. spray vegetables with cooking spray and sprinkle with dried herbs.
  • 2 roast at 425 for 40 minutes, or until vegetables are browned and tender.
  • 3 process vegetables and basil in a food processor until almost smooth. season to taste with salt and pepper.
