Roasted Tomato Dip

Ingredients
- 2 cups ripe tomatoes, chopped
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 2 tablespoons finely diced onions
- 2 tablespoons chopped fresh basil
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon black pepper
Recipe
- 1 on a rimmed baking sheet, combine tomatoes, oil and salt.
- 2 roast in a 450* oven for 10 minutes. turn oven to broil and roast tomatoes until golden brown, about 5 minutes.
- 3 transfer to a food processor. add onion, basil, vinegar and pepper and pulse until smooth.
- 4 serve immediately or refrigerate for up to 3 days.
