Roasted Tomato Dip

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups ripe tomatoes, chopped
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 2 tablespoons finely diced onions
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon black pepper

Recipe

  • 1 on a rimmed baking sheet, combine tomatoes, oil and salt.
  • 2 roast in a 450* oven for 10 minutes. turn oven to broil and roast tomatoes until golden brown, about 5 minutes.
  • 3 transfer to a food processor. add onion, basil, vinegar and pepper and pulse until smooth.
  • 4 serve immediately or refrigerate for up to 3 days.
