Roasted Tomatillo Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 cups tomatillos (roasted and sliced)
  • 3 stalks celery (sliced)
  • 3 medium carrots (diced)
  • 1 large leek (sliced)
  • 1 red bell pepper (diced)
  • 1 large poblano pepper (diced)
  • 1 jalapeno (diced)
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1 tablespoon cumin
  • 1 tablespoon green chili powder
  • 6 cups vegetable broth
  • 1/3 cup orange juice
  • 1/4 cup lime juice
  • 1/2 cup fresh cilantro

Recipe

  • 1 saute all veggies in olive oil for 5 - 10 minutes over med-high heat.
  • 2 add spices and saute a few more minutes.
  • 3 add broth and simmer for about 20 minutes.
  • 4 add juices and cilantro.
  • 5 salt to taste.
