Roasted Tilapia With Artichoke Hearts And Tomatoes

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 large red onions, cut into 1/4-inch wedges
  • 2 tablespoons olive oil
  • 1 (10 ounce) package frozen artichoke hearts, thawed
  • 1 cup small grape tomatoes
  • 1 teaspoon grated lemon zest
  • 1 garlic clove, minced
  • 2 tablespoons chopped parsley
  • 4 (6 ounce) skinless tilapia fillets

Recipe

  • 1 preheat oven to 400°.
  • 2 combine onions and oil in 13x9รข€? baking dish.
  • 3 spread in even layer.
  • 4 roast until onions are golden, about 35 minutes.
