Roasted Tilapia, Potatoes, And Lemons

Ingredients

- 1 lb baby potatoes, about 12, cut in half
- 1 lemon, thinly sliced
- 8 sprigs fresh thyme
- 2 tablespoons olive oil
- 1 teaspoon olive oil
- kosher salt and black pepper
- 1/2 cup kalamata olive, halved
- 24 ounces skinless tilapia fillets
- 1/2 teaspoon paprika
Recipe
- 1 preheat oven to 400 degrees fahrenheit.
- 2 on a large rimmed baking sheet, toss the potatoes, lemon, thyme, 2 tablespoons olive oil and 1/4 teaspoon salt and pepper.
- 3 arrange in a single layer.
- 4 roast, tossing once until the potatoes begin to soften about 20 minutes.
- 5 toss the olives with potato mixture; nestle the fish in the potato mixture.
- 6 drizzle the fish with the 1 teaspoon olive oil.
