Roasted Sweet Potatoes And Apples

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup pure maple syrup
  • 2 tablespoons lemon zest, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 3 lbs sweet potatoes, unpeeled, cut into 1-inch chunks
  • 2 fuji apples, cored, unpeeled, cut into 1-inch chunks
  • 2 apples, cored, unpeeled, cut into 1-inch chunks
  • 2 granny smith apples, cored, unpeeled, cut into 1-inch chunks

Recipe

  • 1 preheat oven to 425 degrees f, then oil 2 large rimmed baking pans.
  • 2 in a large bowl, whisk together the first 7 ingredients, before adding the rest of the ingredients, then toss to coat.
  • 3 spread the coated potatoes & apples in a single layer in the prepared baking pans & roast in the oven for about 40 minutes (or until potatoes are slightly browned & tender when pierced), turning chunks every 15 minutes.
  • 4 transfer to a platter & serve.
