Roasted Sweet Potato Slices

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 1 tablespoon butter, melted
  • 3/4 lb sweet potato, left unpeeled and cut into 1/8 inch thick slices
  • salt

Recipe

  • 1 in a small bowl whisk together the oil, butter and salt and pepper to taste.
  • 2 arrange the potato slices not touching in rows on an oiled baking sheet.
  • 3 brush slices with the oil mixture.
  • 4 roast them in the oven on the upper third or middle layer of a pre heated 450 degree oven turning once.
  • 5 bake for about 18-22 minutes or until golden crisp.
  • 6 drain on paper towels and sprinkle with salt to taste.
