Italian Style Cauliflower

Total Time: 10 mins Preparation Time: 3 mins Cook Time: 7 mins

Ingredients

  • Servings: 3
  • 8 ounces cauliflower florets
  • 1/4 cup olive oil
  • 1 tablespoon wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon anchovy paste
  • salt and black pepper
  • 2 tablespoons pine nuts or 2 tablespoons slivered almonds (optional)

Recipe

  • 1 steam the cauliflower for 5 to 7 minutes until crisp-tender.
  • 2 if using the nuts, lightly saute in a small amount of oil.
  • 3 blend or shake the remaining ingredients and pour over warm cauliflower.
  • 4 toss to coat.
  • 5 top with toasted nuts.
