Nectarine Delight

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 6 -7 large ripe west virginia nectarines, pitted and sliced
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 egg
  • 1 egg yolk
  • 3/4 cup heavy cream

Recipe

  • 1 toss nectarines with sugar and flour.
  • 2 place in 13 x 9 x 2 inch baking dish coated with non-stick cooking spray.
  • 3 beat together egg and egg yolk; whisk into cream.
  • 4 pour mixture over nectarines.
  • 5 bake in preheated 425 degree oven for 10 minutes.
  • 6 reduce oven temperature to 350 degrees and bake for 35 to 40 minutes.
  • 7 remove from oven and cool.
  • 8 serve warm or at room temperature.
  • 9 garnish with fresh mint.
  • 10 peaches can be substituted for nectarines (peach skin should be removed).
