Nectarine Delight

Ingredients

- 6 -7 large ripe west virginia nectarines, pitted and sliced
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 egg
- 1 egg yolk
- 3/4 cup heavy cream
Recipe
- 1 toss nectarines with sugar and flour.
- 2 place in 13 x 9 x 2 inch baking dish coated with non-stick cooking spray.
- 3 beat together egg and egg yolk; whisk into cream.
- 4 pour mixture over nectarines.
- 5 bake in preheated 425 degree oven for 10 minutes.
- 6 reduce oven temperature to 350 degrees and bake for 35 to 40 minutes.
- 7 remove from oven and cool.
- 8 serve warm or at room temperature.
- 9 garnish with fresh mint.
- 10 peaches can be substituted for nectarines (peach skin should be removed).
