Microwaved Apricot Egg Custard

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 825 g apricot halves (drained)
  • 3/4 cup caster sugar
  • 2 tablespoons flour
  • 300 g sour cream
  • 2 eggs (lightly beaten)
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg

Recipe

  • 1 divide apricot halves between 4 oven-proof dishes.
  • 2 combine sugar, sifted flour, sour cream, eggs and vanilla in bowl.
  • 3 mix well and pour over the apricots.
  • 4 sprinkle with nutmeg.
  • 5 microwave on high for about 4 mins or until custard is set.
  • 6 serve with whipped cream.
