Microwave Peach Jam

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 32
  • 4 cups frozen unsweetened sliced peaches, thawed
  • 1 3/4 ounces powdered fruit pectin (1 package)
  • 1 tablespoon sugar
  • 1/2 teaspoon ascorbic acid
  • 1 tablespoon lemon juice (optional)

Recipe

  • 1 mash peaches with a potato masher.
  • 2 combine peaches with pectin, sugar, ascorbic acid, and lemon juice, if desired, in a deep 2-quart casserole.
  • 3 cover and microwave 3 to 4 minutes or until mixture boils 1 minute.
  • 4 remove from microwave, continue to stir 2 minutes.
  • 5 pour into freezer containers; cover and freeze.
  • 6 to serve, let jam thaw in refrigerator.
  • 7 store jam in freezer up to 1 year, or in refrigerator up to 1 month.
  • 8 yield: 2 half pints (about 14 calories per tablespoon).
