Marmelatha Nektarinia - Greek - Nectarine Preserves

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 2 lbs large ripe nectarines
  • 2 lbs sugar
  • 1/4 cup water
  • 1/8 teaspoon vanilla extract
  • 1/4 cup brandy
  • 1 1/2 tablespoons lemon juice

Recipe

  • 1 peel and seed nectarines, and cut into large chunks.
  • 2 add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.
  • 3 keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
