Marmelatha Nektarinia - Greek - Nectarine Preserves

Ingredients
- 2 lbs large ripe nectarines
- 2 lbs sugar
- 1/4 cup water
- 1/8 teaspoon vanilla extract
- 1/4 cup brandy
- 1 1/2 tablespoons lemon juice
Recipe
- 1 peel and seed nectarines, and cut into large chunks.
- 2 add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.
- 3 keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
- 4 place in sterilized jars and allow to cool completely before sealing.
