Luby's Cafeteria Lemon Icebox Pie

Total Time: 2 hrs 15 mins Preparation Time: 2 hrs Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 (14 ounce) can sweetened condensed milk
  • 4 extra-large eggs, separated
  • 1/2 cup fresh lemon juice (3 to 4 lemons)
  • 1 teaspoon grated lemon peel
  • 1/4 cup granulated sugar
  • 1 (9 inch) graham cracker crust

Recipe

  • 1 preheat the oven to 350°f.
  • 2 in medium bowl, combine sweetened condensed milk, egg yolks, lemon juice and lemon peel.
  • 3 mix until well blended.
  • 4 pour into crust.
  • 5 bake 5 minutes.
  • 6 refrigerate at least 2 hours.
  • 7 in large bowl, beat egg whites until soft peaks form.
  • 8 add sugar, a tablespoon at a time, beating constantly until stiff peaks form.
  • 9 spread over filling making sure to go to edge of crust.
  • 10 bake 12 to 15 minutes or until lightly browned.
  • 11 refrigerate until served.
