Luby's Cafeteria Lemon Icebox Pie

Ingredients

- 1 (14 ounce) can sweetened condensed milk
- 4 extra-large eggs, separated
- 1/2 cup fresh lemon juice (3 to 4 lemons)
- 1 teaspoon grated lemon peel
- 1/4 cup granulated sugar
- 1 (9 inch) graham cracker crust
Recipe
- 1 preheat the oven to 350°f.
- 2 in medium bowl, combine sweetened condensed milk, egg yolks, lemon juice and lemon peel.
- 3 mix until well blended.
- 4 pour into crust.
- 5 bake 5 minutes.
- 6 refrigerate at least 2 hours.
- 7 in large bowl, beat egg whites until soft peaks form.
- 8 add sugar, a tablespoon at a time, beating constantly until stiff peaks form.
- 9 spread over filling making sure to go to edge of crust.
- 10 bake 12 to 15 minutes or until lightly browned.
- 11 refrigerate until served.
