Italian Water Ice - Lemon

Total Time: 24 hrs 20 mins Preparation Time: 20 mins Cook Time: 24 hrs

Ingredients

  • Servings: 4
  • 1 quart water
  • 2 cups sugar
  • 3/4 cup lemon juice
  • 1 lemon, rind of, grated no part

Recipe

  • 1 boil water and sugar together for 5 minutes.
  • 2 cool.
  • 3 stir in juice and peel.
  • 4 pour into shallow bowl and put in freezer.
  • 5 as it starts to freeze, keep stirring the outside crystals into the center and mix in peel.
  • 6 do about every half hour -must do!.
  • 7 when real slushy, stop and freeze overnight.
  • 8 to serve, you must scrape very thin layers of the slush off the top.
  • 9 i use a big spoon with sharp edges moving it sideways.
