Italian Water Ice - Lemon

Ingredients
- Servings: 4
- 1 quart water
- 2 cups sugar
- 3/4 cup lemon juice
- 1 lemon, rind of, grated no part
Recipe
- 1 boil water and sugar together for 5 minutes.
- 2 cool.
- 3 stir in juice and peel.
- 4 pour into shallow bowl and put in freezer.
- 5 as it starts to freeze, keep stirring the outside crystals into the center and mix in peel.
- 6 do about every half hour -must do!.
- 7 when real slushy, stop and freeze overnight.
- 8 to serve, you must scrape very thin layers of the slush off the top.
- 9 i use a big spoon with sharp edges moving it sideways.
