Ingredients

- 50 g plain flour
- 2 teaspoons olive oil
- 3 egg whites
- 600 g mixed seafood, ie prawns, calamari, and scallops

Recipe
- 1 sift the flour into a metal bowel and add the salt, mix the olive oil in with a wooden spoon and mix in 250 ml of water. whisk the egg whites and fold them in gently.
- 2 fill a saucepan 1/3 full and then bring to 170c (340f), if the oil starts to smoke it has been heated to much, a piece of paper cloth should bubble when dipped inches.
- 3 dip the seafood into the batter and deep fry in several batches.
