Fried Herbed Almonds

Ingredients
- 3 tablespoons extra virgin olive oil
- 2 cups whole blanched almonds
- 2 tablespoons fresh thyme leaves
- coarse salt & freshly ground black pepper, to taste
Recipe
- 1 heat oil in a large skillet over medium heat.
- 2 add almonds and cook, stirring occasionally, until lightly golden and fragrant, 10 to 12 minutes.
- 3 stir in thyme leaves. remove from heat. season with salt and pepper. spread out on a rimmed baking sheet, and let cool completely.
- 4 almonds can be stored in an airtight container at room temperature up to 2 weeks.
