Rustic Dried Cherry Salad

Ingredients

- 3 cups french bread, cubed
- 1/4 cup pecans, chopped (or walnuts)
- 1/2 cup dried cherries, chopped
- 1 stalk celery, trimmed and diced
- 3 tablespoons canola oil
- 3 tablespoons raspberry vinegar
- 1 tablespoon honey
- 2 tablespoons water
- 1/4 teaspoon curry powder
Recipe
- 1 preheat oven to 350 degrees. spread bread cubes on baking sheet; bake 15 minutes or until toasted. cook completely. set aside.
- 2 toast pecans in a medium skillet over medium heat 3 minutes, stirring frequently.
- 3 combine pecans, cherries, celery and bread in a large bowl. combine oil, vinegar, honey, water and curry powder in a cup. stir well. pour over salad and toss. serve immediately.
