Rustic Mashed Potatoes With Mascarpone And Chives

Ingredients

- 1 teaspoon salt (to taste)
- 3 lbs yukon gold potatoes, cut into 3-inch pieces
- 10 garlic cloves, peeled and root ends trimmed
- 1/3 cup mascarpone cheese
- 1 cup milk
- 3 tablespoons finely chopped fresh chives
- white pepper
Recipe
- 1 bring a big pot of water to a boil; add in salt, potatoes, and garlic.
- 2 decrease heat and simmer, covered, for 15-20 minutes or until the potatoes are fork-tender.
- 3 drain potatoes and garlic in a colander; then return to pot.
- 4 dry the potatoes over high heat for 1-2 minutes, tossing them until all the moisture is evaporated.
- 5 transfer the potatoes and garlic to a big bowl; mash potatoes with a potato masher or electric mixer.
- 6 add in the mascarpone cheese and milk; beat with a wooden spoon or a wire whisk until smooth.
- 7 when the liquid has been absorbed, add 2 tablespoons chives and salt/pepper to taste.
- 8 transfer to a serving bowl; garnish with remaining chives and serve.
