Roasted Veggie Platter

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 medium sweet red pepper, cut into 1 1/2 inch pieces
  • 1 medium sweet onion, cut into wedges
  • 1 medium zucchini, but into 1/2 inch slices
  • 1/2 lb whole fresh mushrooms
  • 1/4 lb fresh green beans, trimmed
  • 1/4 cup italian salad dressing
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary, crushed

Recipe

  • 1 place the vegetables in a greased 15x10x1 inch baking pan.
  • 2 drizzle with salad dressing and sprinkle with herbs.
  • 3 bake, uncovered at 425 degrees for 15 to 20 minutes or until vegetables are crisp tender.
  • 4 arrange vegetables on platter as desired.
