Roasted Veggie Platter

Ingredients
- Servings: 6
- 1 medium sweet red pepper, cut into 1 1/2 inch pieces
- 1 medium sweet onion, cut into wedges
- 1 medium zucchini, but into 1/2 inch slices
- 1/2 lb whole fresh mushrooms
- 1/4 lb fresh green beans, trimmed
- 1/4 cup italian salad dressing
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary, crushed
Recipe
- 1 place the vegetables in a greased 15x10x1 inch baking pan.
- 2 drizzle with salad dressing and sprinkle with herbs.
- 3 bake, uncovered at 425 degrees for 15 to 20 minutes or until vegetables are crisp tender.
- 4 arrange vegetables on platter as desired.
