Rustic Pasta Sauce

Ingredients

- 1 large onion, cubed
- 1 medium zucchini, cubed
- 1 green pepper, cubed
- 1 red pepper, cubed
- 12 mushrooms, cubed
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 (28 ounce) can tomatoes, chopped
- 1 teaspoon garlic, crushed
- 1 tablespoon basil
- 1 tablespoon parsley
- 1/2 teaspoon thyme
- 1/4 teaspoon oregano
Recipe
- 1 on a lined cookie sheet, spread onions, zucchini, pepper and mushrooms.
- 2 sprinkle with olive oil, salt and pepper.
- 3 roast uncovered at a 425°f oven for 45 minutes.
- 4 meanwhile bring a 28 oz can of tomatoes to a boil then simmer with the garlic.
- 5 combine with roasted vegetables and herbs.
- 6 after adding the vegetables and the herbs to the tomatoes simmer another 30 minutes.
- 7 serve with freshly cooked penne or pasta of your choice.
- 8 sprinkle with shaved parmesan cheese and freshly crushed pepper.
