Rustic Pasta Sauce

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 large onion, cubed
  • 1 medium zucchini, cubed
  • 1 green pepper, cubed
  • 1 red pepper, cubed
  • 12 mushrooms, cubed
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (28 ounce) can tomatoes, chopped
  • 1 teaspoon garlic, crushed
  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 1/2 teaspoon thyme
  • 1/4 teaspoon oregano

Recipe

  • 1 on a lined cookie sheet, spread onions, zucchini, pepper and mushrooms.
  • 2 sprinkle with olive oil, salt and pepper.
  • 3 roast uncovered at a 425°f oven for 45 minutes.
  • 4 meanwhile bring a 28 oz can of tomatoes to a boil then simmer with the garlic.
  • 5 combine with roasted vegetables and herbs.
  • 6 after adding the vegetables and the herbs to the tomatoes simmer another 30 minutes.
  • 7 serve with freshly cooked penne or pasta of your choice.
  • 8 sprinkle with shaved parmesan cheese and freshly crushed pepper.
