Russian Tea Cakes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 pinch salt
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 cup fine chopped pecans
  • powdered sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a large bowl, beat together butter, ½ cup powder sugar, vanilla and salt until light and fluffy.
  • 3 gradually beat in flour and baking soda until well blended.
  • 4 stir in pecans.
  • 5 roll dough by teaspoonfuls into balls, place 1-1/2 inches apart, on ungreased baking sheets.
  • 6 bake 15 to 17 minutes or until edges begin to brown lightly.
  • 7 remove cookies from baking sheets, cool on racks.
  • 8 while warm, toss in sifted powder sugar.
  • 9 when cooled slightly with powder sugar.
