Russian Tea Cakes

Ingredients
- 1 cup unsalted butter, room temperature
- 1 1/2 cups powdered sugar
- 2 teaspoons vanilla extract
- 1 pinch salt
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 cup fine chopped pecans
- powdered sugar
Recipe
- 1 preheat oven to 350°f.
- 2 in a large bowl, beat together butter, ½ cup powder sugar, vanilla and salt until light and fluffy.
- 3 gradually beat in flour and baking soda until well blended.
- 4 stir in pecans.
- 5 roll dough by teaspoonfuls into balls, place 1-1/2 inches apart, on ungreased baking sheets.
- 6 bake 15 to 17 minutes or until edges begin to brown lightly.
- 7 remove cookies from baking sheets, cool on racks.
- 8 while warm, toss in sifted powder sugar.
- 9 when cooled slightly with powder sugar.
