Russian Salad

Ingredients

  • Servings: 6
  • 2 cups potatoes, peeled, diced and cooked
  • 2 cups carrots, peeled, diced and cooked
  • 1 cup tart apple, peeled and diced
  • 1 cup dill pickle, minced
  • 1/3 cup onion, minced
  • 2 cups beets, cooked, peeled and diced
  • 2/3 cup heavy cream, whipped or 2/3 cup sour cream
  • 2 tablespoons fresh lemon juice or 2 tablespoons vinegar
  • 1 dash salt, sugar and freshly ground black pepper
  • egg, hard-boiled, sliced

Recipe

  • 1 place first 3 ingredients in large salad bowl and chill.
  • 2 combine all dressing ingredients and chill.
  • 3 add the beets to salad bowl just before serving and mix gently.
  • 4 serve dressing on side, mounded on salad or mixed into salad ingredients just before serving.
  • 5 garnish with eggs, if desired.
