Russian Salad

Ingredients
- Servings: 6
- 2 cups potatoes, peeled, diced and cooked
- 2 cups carrots, peeled, diced and cooked
- 1 cup tart apple, peeled and diced
- 1 cup dill pickle, minced
- 1/3 cup onion, minced
- 2 cups beets, cooked, peeled and diced
- 2/3 cup heavy cream, whipped or 2/3 cup sour cream
- 2 tablespoons fresh lemon juice or 2 tablespoons vinegar
- 1 dash salt, sugar and freshly ground black pepper
- egg, hard-boiled, sliced
Recipe
- 1 place first 3 ingredients in large salad bowl and chill.
- 2 combine all dressing ingredients and chill.
- 3 add the beets to salad bowl just before serving and mix gently.
- 4 serve dressing on side, mounded on salad or mixed into salad ingredients just before serving.
- 5 garnish with eggs, if desired.
