Round-up Chili

Ingredients

  • Servings: 12
  • 2 lbs lean ground beef
  • 1 1/2 lbs beef flank steak, cubed
  • 1 medium onion, chopped
  • 1 celery rib, chopped
  • 29 ounces tomato sauce
  • 29 ounces diced tomatoes, undrained
  • 16 ounces kidney beans, rinsed and drained
  • 15 ounces pinto beans, rinsed and drained
  • 4 ounces green chilies
  • 2 -3 tablespoons chili powder
  • 3 teaspoons ground cumin
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • hot pepper sauce
  • cheese, shredded
  • onion, additional chopped

Recipe

  • 1 in a large skillet, cook the ground beef, flank steak, onion, and celery over medium heat until meat is no longer pink and drain.
  • 2 transfer to a 6-quart slow cooker.
  • 3 stir in the tomato sauce, tomatoes, beans, chilies, and seasonings.
  • 4 cover and cook on low for 6 to 8 hours.
  • 5 serve with hot pepper sauce, cheese, and onion if desired.
