Rocky Road

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 650 g chocolate
  • 400 g marshmallows, pink & white
  • 100 g peanuts or 100 g other nuts

Recipe

  • 1 divide chocolate into 2 batches, 400g & 250g.
  • 2 melt 400g chocolate in microwave.
  • 3 cut marshmallow into large squares and stir into the 400g of chocolate, add peanuts and stir, place into a foil lined 9x12 pan, refrigerate till set.
  • 4 when set slice down the middle length wise and then each piece into 5 giving you 10 good size pieces.
  • 5 melt remaining chocolate and coat each piece with pastry brush leaving one side bare so you can see the marshmallow.
  • 6 refrigerate till chocolate is set.
