Rock Cakes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 20
  • 8 ounces cake flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon mixed spice
  • 1 egg
  • 3 ounces butter or 3 ounces margarine
  • 3 ounces sugar
  • 3 ounces dried fruit
  • milk (to mix)
  • water (to mix)

Recipe

  • 1 preheat oven to gas 6/400f degrees.
  • 2 grease a baking sheet.
  • 3 put flour, salt, spice, butter/margarine in processer/mixer and mix.
  • 4 add egg and sugar and mix again.
  • 5 add enough milk/water to bind the mixture (if the mixture is too soft the cakes will flatten and spread).
  • 6 fold in the dried fruit.
  • 7 put on the baking sheet in small rough heaps.
  • 8 bake for 15 minutes.
