Ingredients

- 2 red bell peppers, chopped in cubes
- 1/2 red onion, chopped
- 10 peeled baby carrots, cut in half
- 2 garlic cloves, diced
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1/4 teaspoon ground black pepper
Recipe
- 1 preheat oven to 375 degrees.
- 2 mix all ingredients in a large bowl until veggies are coated.
- 3 place in one layer in baking or roasting pan.
- 4 bake in oven for 25-30 minutes, turning half way through.
- 5 enjoy immediately. add additional seasoning if desired.
