Rustic Jicama Appetizer W/ Red Chile & Lime

Ingredients

  • Servings: 6
  • 1 lb jicama
  • 2 small cucumbers
  • 3 seedless oranges
  • 6 radishes, thinly sliced
  • 2 limes, juice of (~1/3 c.)
  • salt
  • 2 teaspoons powdered dried hot chili peppers
  • 2/3 cup pickled red onion (optional)

Recipe

  • 1 chop up all veggies bite-sized.
  • 2 peel and segement orange (i use canned mandarins as a shortcut).
  • 3 mix veggies and oranges w/ lime juice in bowl
  • 4 let sit for 20 min
  • 5 season w/ salt.
  • 6 transfer serving platter and drizzle w/ juices.
  • 7 top w/ chile powder.
  • 8 serve immediately.
