Roasted Vegetables

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 butternut pumpkin, peeled and cubed
  • 2 red capsicums, cut into chunks
  • 1 sweet potato, peeled and cubed
  • 3 potatoes, peeled and cubed
  • 1 red onion, peeled and quartered
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper

Recipe

  • 1 mix the herbs and spices with the oil and vinegar.
  • 2 toss vegetables in the oil mixture.
  • 3 heat oven to 475f or 245°c.
  • 4 please vegetables in large roasting dish in single layer.
  • 5 roast for 35-45 minutes stirring every 10 minutes.
