Roman Kebabs

Ingredients

- 1 french bread (long stick)
- 13 ounces mozzarella cheese
- 4 tomatoes
- 1/3 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- salt and black pepper
- fresh basil (to garnish)
Recipe
- 1 preheat oven to 450°.
- 2 soak 4 wooden skewers in water for 10 minutes (can use metal).
- 3 cut bread into thick slices, and cut mozzarella into 12 slices.
- 4 slice tomatoes into 3 slices each.
- 5 combine oil, lemon juice, oregano and seasoning in a shallow dish.
- 6 brush both sides of bread with oil, thread bread skewers, alternating with mozzarella and tomato and finishing with bread.
- 7 pour any remaining oil over kebabs.
- 8 place kebabs on a baking sheet, cook for 6-8 minutes, turning halfway through, until bread is crisp and cheese has melted.
- 9 serve garnished with basil.
