Roman Kebabs

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 french bread (long stick)
  • 13 ounces mozzarella cheese
  • 4 tomatoes
  • 1/3 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • salt and black pepper
  • fresh basil (to garnish)

Recipe

  • 1 preheat oven to 450°.
  • 2 soak 4 wooden skewers in water for 10 minutes (can use metal).
  • 3 cut bread into thick slices, and cut mozzarella into 12 slices.
  • 4 slice tomatoes into 3 slices each.
  • 5 combine oil, lemon juice, oregano and seasoning in a shallow dish.
  • 6 brush both sides of bread with oil, thread bread skewers, alternating with mozzarella and tomato and finishing with bread.
  • 7 pour any remaining oil over kebabs.
  • 8 place kebabs on a baking sheet, cook for 6-8 minutes, turning halfway through, until bread is crisp and cheese has melted.
  • 9 serve garnished with basil.
