Roasted Yam With Sunflower And Pomegranate Seeds

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 medium yams or 1 medium sweet potato, peeled and cubed
  • 1 cup fresh broccoli, cut into small pieces
  • 1 small leek, sliced into half rounds
  • 1 tablespoon olive oil or 1 tablespoon coconut oil
  • salt & pepper
  • 1/2 cup sunflower seeds or 1/2 cup pepitas
  • 1/2 cup pomegranate seeds
  • 1/3 cup feta cheese or 1/3 cup shredded cheddar cheese

Recipe

  • 1 preheat oven to 400 degrees f. toss vegetables with oil and salt and pepper.
  • 2 spread vegetables on a cookie sheet and roast in the oven for 20-25 minutes, stirring occasionally.
  • 3 put in a bowl with seeds and cheese. mix gently and eat immediately.
