Ingredients

- 8 red potatoes
- 2 red bell peppers
- 1 large onion
- salt
- pepper
- olive oil
- balsamic vinegar
- rosemary
Recipe
- 1 wash and cut the potatoes, and boil in a large pot until they yield to a fork (about 10 minutes).
- 2 wash and slice thick cuts of pepper and onion.
- 3 strain and rinse potatoes with cold water to stop cooking.
- 4 toss potatoes, peppers, and onions together in pan with loads of salt, pepper, and olive oil.
- 5 sprinkle balsamic vinegar and rosemary over vegetables.
- 6 roast at 450 f for about 25-30 minutes.
