Roasted Vegetables

Ingredients

  • Servings: 8
  • 8 red potatoes
  • 2 red bell peppers
  • 1 large onion
  • salt
  • pepper
  • olive oil
  • balsamic vinegar
  • rosemary

Recipe

  • 1 wash and cut the potatoes, and boil in a large pot until they yield to a fork (about 10 minutes).
  • 2 wash and slice thick cuts of pepper and onion.
  • 3 strain and rinse potatoes with cold water to stop cooking.
  • 4 toss potatoes, peppers, and onions together in pan with loads of salt, pepper, and olive oil.
  • 5 sprinkle balsamic vinegar and rosemary over vegetables.
  • 6 roast at 450 f for about 25-30 minutes.
