Roasted Vegetables With Honey And Feta Cheese

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 red peppers, thickly sliced
  • 2 carrots, chopped
  • 1 lb zucchini, quartered diagonally
  • 2 red onions, each cut into 4 chunks
  • 1/2 butternut squash, peeled and cut into chunks
  • 6 tablespoons olive oil, for roasting
  • 4 sprigs thyme
  • 7 ounces feta cheese
  • 4 tablespoons honey

Recipe

  • 1 preheat the oven to 400°f place all the vegetables in a large roasting tin with the olive oil.
  • 2 season, add the thyme, then roast for about 40 minutes.
  • 3 cut the feta cheese into cubes and add to the vegetables.
  • 4 gently stir through with the honey.
  • 5 return to the oven for another 5 minutes before serving.
  • 6 you can serve this either straight from the oven or at room temperature.
