Roasted Vegetables With Honey And Feta Cheese

Ingredients
- Servings: 4
- 2 red peppers, thickly sliced
- 2 carrots, chopped
- 1 lb zucchini, quartered diagonally
- 2 red onions, each cut into 4 chunks
- 1/2 butternut squash, peeled and cut into chunks
- 6 tablespoons olive oil, for roasting
- 4 sprigs thyme
- 7 ounces feta cheese
- 4 tablespoons honey
Recipe
- 1 preheat the oven to 400°f place all the vegetables in a large roasting tin with the olive oil.
- 2 season, add the thyme, then roast for about 40 minutes.
- 3 cut the feta cheese into cubes and add to the vegetables.
- 4 gently stir through with the honey.
- 5 return to the oven for another 5 minutes before serving.
- 6 you can serve this either straight from the oven or at room temperature.
