Robusto Chicken Cutlet With Applewood Smoked Bacon

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 boneless chicken breasts
  • salt and pepper
  • 2 tablespoons flour
  • 2 eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1 cup italian seasoned breadcrumbs
  • 2 tablespoons vegetable oil
  • 4 slices thick cut applewood smoked bacon
  • robusto cheese, shredded, about 1/2 cup (or more)

Recipe

  • 1 rinse and dry chicken; pound to a uniform thickness. sprinkle with salt and pepper to taste.
  • 2 dredge in flour.
  • 3 mix egg and garlic powder; dip chicken in egg mixture.
  • 4 coat with bread crumbs.
  • 5 heat oil in skillet until shimmering and just starting to smoke.
  • 6 heat ungreased cookie sheet in 350f oven.
  • 7 brown chicken quickly in oil, about 2 minutes on each side.
  • 8 place on hot cookie sheet. bake in oven 10-15 minutes.
  • 9 while chicken is baking, cook bacon until crispy, then drain on paper towels.
  • 10 remove chicken from oven, place 2 strips bacon on each cutlet.
  • 11 sprinkle warm chicken generously with shredded cheese, let melt. (return to oven to melt if necessary).
