Robusto Chicken Cutlet With Applewood Smoked Bacon

Ingredients

- 2 boneless chicken breasts
- salt and pepper
- 2 tablespoons flour
- 2 eggs, beaten
- 1/4 teaspoon garlic powder
- 1 cup italian seasoned breadcrumbs
- 2 tablespoons vegetable oil
- 4 slices thick cut applewood smoked bacon
- robusto cheese, shredded, about 1/2 cup (or more)
Recipe
- 1 rinse and dry chicken; pound to a uniform thickness. sprinkle with salt and pepper to taste.
- 2 dredge in flour.
- 3 mix egg and garlic powder; dip chicken in egg mixture.
- 4 coat with bread crumbs.
- 5 heat oil in skillet until shimmering and just starting to smoke.
- 6 heat ungreased cookie sheet in 350f oven.
- 7 brown chicken quickly in oil, about 2 minutes on each side.
- 8 place on hot cookie sheet. bake in oven 10-15 minutes.
- 9 while chicken is baking, cook bacon until crispy, then drain on paper towels.
- 10 remove chicken from oven, place 2 strips bacon on each cutlet.
- 11 sprinkle warm chicken generously with shredded cheese, let melt. (return to oven to melt if necessary).
