Roasted Zucchini Dip

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1 1/2 cups coarsely chopped zucchini
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon minced capers

Recipe

  • 1 on rimmed baking sheet, combine zucchini, oil, salt and pepper and toss well to coat. roast at 350 for 15 minutes or until soft.
  • 2 transfer to a food processor and pulse until smooth.
  • 3 transfer to a bowl and combine with sour cream, lemon juice and capers.
