Roasted Zucchini Dip

Ingredients
- 1 1/2 cups coarsely chopped zucchini
- 1/4 cup olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon minced capers
Recipe
- 1 on rimmed baking sheet, combine zucchini, oil, salt and pepper and toss well to coat. roast at 350 for 15 minutes or until soft.
- 2 transfer to a food processor and pulse until smooth.
- 3 transfer to a bowl and combine with sour cream, lemon juice and capers.
