Roasted Rosemary Potatoes

Ingredients

- 4 medium potatoes
- 1/4 cup finely chopped onion
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary
- 1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 heat oven to 450°f.
- 2 grease a jelly roll pan (15 1/2x10 1/2x1-inch).
- 3 cut potatoes into 1-inch pieces.
- 4 mix remaining ingredients in large bowl.
- 5 add potatoes and toss to coat.
- 6 spread potatoes in a single layer in the pan.
- 7 bake uncovered 20-25 minutes until they are light brown.
