Roasted Rosemary Potatoes

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 medium potatoes
  • 1/4 cup finely chopped onion
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary
  • 1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 heat oven to 450°f.
  • 2 grease a jelly roll pan (15 1/2x10 1/2x1-inch).
  • 3 cut potatoes into 1-inch pieces.
  • 4 mix remaining ingredients in large bowl.
  • 5 add potatoes and toss to coat.
  • 6 spread potatoes in a single layer in the pan.
  • 7 bake uncovered 20-25 minutes until they are light brown.
