Roasted Roma Tomatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1/2 cup olive oil
  • 4 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lbs roma tomatoes, halved lengthwise

Recipe

  • 1 preheat oven to 400°f line a baking sheet with foil, and coat lightly with some of the olive oil.
  • 2 in a small bowl, combine the remaining olive oil, garlic, basil, crushed red pepper, salt, and black pepper.
  • 3 place tomatoes cut-side up on the baking sheet. brush with the olive oil mixture.
  • 4 bake 25-30 minutes, or until the tomatoes have softened and are sizzling, with the edges slightly charred. serve hot.
