S'mores Cookies

Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened (2 sticks)
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups rolled oats
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 2 cups graham crackers, coursely chopped (about 8 crackers)
Recipe
- 1 heat oven to 350 degrees. line 2 baking sheets with parchment paper.
- 2 in medium bowl whisk together flour baking soda and salt. set aside.
- 3 in large bowl, use electric mixer on medium to beat together the butter and both sugars until creamy, about 4 minutes.
- 4 with the mixer on low add the eggs one at a time, beating gently until combined. add vanilla. with the mixer still on low add flour mixture.
- 5 mix in the oats, chocolate chips, marshmallows and graham crackers until just combined.
- 6 evenly space 6 rounded tablespoons of dough per baking sheet, leaving plenty of room between them. bake cookies for 10 to 12 mins, or until golden brown.
- 7 cool for 15 mins on baking sheet then transfer to wire rack to cool completely.
