S'mores Cookies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened (2 sticks)
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 2 cups graham crackers, coursely chopped (about 8 crackers)

Recipe

  • 1 heat oven to 350 degrees. line 2 baking sheets with parchment paper.
  • 2 in medium bowl whisk together flour baking soda and salt. set aside.
  • 3 in large bowl, use electric mixer on medium to beat together the butter and both sugars until creamy, about 4 minutes.
  • 4 with the mixer on low add the eggs one at a time, beating gently until combined. add vanilla. with the mixer still on low add flour mixture.
  • 5 mix in the oats, chocolate chips, marshmallows and graham crackers until just combined.
  • 6 evenly space 6 rounded tablespoons of dough per baking sheet, leaving plenty of room between them. bake cookies for 10 to 12 mins, or until golden brown.
  • 7 cool for 15 mins on baking sheet then transfer to wire rack to cool completely.
