S'more Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup graham cracker crumbs (about 8 squares)
  • 1/4 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/2 cups buttermilk
  • 1/4 cup vegetable oil
  • 3/4 cup semi-sweet chocolate chips
  • 1 1/4 cups miniature marshmallows, divided

Recipe

  • 1 in a large bowl, combine the dry ingredients.
  • 2 combine egg, buttermilk and oil; mix well.
  • 3 stir into dry ingredients just until moistened.
  • 4 fold in chocolate chips and 1 cup marshmallows.
  • 5 fill greased jumbo muffin cups three fourths full.
  • 6 sprinkle with remaining marshmallows.
  • 7 bake at 375 degrees for 18-20 or until a toothpick comes out clean.
  • 8 cool for 5 minutes before removing from pan to wire rack.
  • 9 serve warm.
