Ingredients
- Servings: 6
- 2 (24 ounce) packages simply potatoes traditional mashed potatoes
- 1 lb celery root, peeled, cut into 3/4 inch cubes
- 1 piece horseradish, 6-inch, peeled, coarsely grated
- 1 1/2 cups sour cream
- 1 (12 ounce) package chopped spinach, frozen okay, drained
Recipe
- 1 place celery root & horseradish in a pot. add water to cover by 1”. bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 20–25 minutes.
- 2 drain, reserving 1/2 cup cooking liquid. return vegetables to pot; add sour cream. use a potato masher, coarsely mash vegetables.
- 3 add simply potatoes® traditional mashed potatoes & reserved cooking liquid by tablespoonfuls if mash is too stiff.
- 4 add chopped spinach and mix/stir 1 minute.
- 5 (re)warm potatoes in the overn, adding more cooking liquid to moisten as needed.
- 6 mound the mash in a bowl and serve.
