Roasted Roma Tomato Jam

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 8 cups roma tomatoes, halved
  • 1/3 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 in a large bowl, toss tomatoes with oil, salt and pepper.
  • 2 spread on a baking sheet and roast at 400* for 20-30 minutes, stirring after the first 10 minutes.
  • 3 let cool until thickened.
