Roasted Red Skin Potatoes With Sausage And Cheese #sp5

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (20 ounce) package simply potatoes red potato wedges
  • 1 (1 lb) package smoked chicken sausage, sliced 1/2 inch thick
  • 1/2 lb grated mild colby-monterey jack cheese
  • 4 scallions, thinly sliced
  • 4 tablespoons olive oil

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large bowl combine potato wedges and 2 tbsp olive oil, toss to coat.
  • 3 place potatoes on a large sheet pan.
  • 4 bake for 20 minutes, turning each wedge over after 10 minutes.
  • 5 heat a large skillet over medium high heat.
  • 6 add 2 tbsp olive oil to coat bottom of skillet.
  • 7 add sausage slices.
  • 8 cook on each side for 5 minutes.
  • 9 drain on paper towels.
  • 10 remove potatoes from oven and place on serving dishes.
  • 11 top with grated cheese and scallions.
