Roasted Red Pepper Sauce

Ingredients

  • 1 large roasted red pepper, seeded (homemade or from a jar)
  • 1 slice bread, crusts removed and torn into small pieces
  • 1 tablespoon reduced-fat mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 puree bell pepper, bread, mayonnaise, salt and pepper in a blender until smooth.
  • 2 pour into a small bowl.
  • 3 cover and refrigerate up to 4 hours before serving.
  • 4 serve with corn cakes.
