S'mores Brownies

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 1 cup finely crushed graham crackers or 1 cup oreo cookies or 1 cup chocolate wafer cookie
  • 3 tablespoons firmly packed brown sugar
  • 4 tablespoons butter, melted
  • 4 tablespoons butter
  • 2 ounces semisweet chocolate, chopped
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour
  • 1 pinch salt
  • 1 cup finely chopped graham cracker
  • 4 tablespoons butter, melted
  • 2 cups miniature marshmallows
  • 1 cup coarsely chopped milk chocolate candy bar (two to three 10 to 12 ounce bars)

Recipe

  • 1 preheat the oven to 350°f.
  • 2 grease an 8 inch square pan or a 7 by 11 inch pan and line it with parchment paper.
  • 3 leave an overhang with which to lift the brownies.
  • 4 line a baking sheet with parchment paper and set aside.
  • 5 for the bottom layer, combine all the ingredients in a small bowl and stir to blend.
  • 6 press the mixture into the prepared pan.
  • 7 chill for 10 minutes.
  • 8 for the brownie layer, melt the butter in a small saucepan.
  • 9 remove from heat and stir in the chocolate to melt.
  • 10 stir in the sugar.
  • 11 let cool just to warm, then whisk in the eggs, vanilla, flour, and salt.
  • 12 spread over the bottom layer in the pan.
  • 13 for the graham cracker layer, toss the chopped graham crackers with the melted butter in a small bowl and distribute over the batter.
  • 14 place the pan on the prepared baking sheet and bake for 22 to 24 minutes, or until set.
  • 15 remove from the oven and preheat the broiler.
  • 16 for the topping, sprinkle the top of the brownies with the marshmallows.
  • 17 place under the broiler until the marshmallows start to melt and brown.
  • 18 (20 to 60 seconds).
  • 19 remove from the oven and sprinkle with the chopped chocolate.
  • 20 if desired, smear the chocolate with a knife as it melts.
  • 21 let cool to room temp and then refrigerate for 20 to 30 minutes before cutting.
