S'more Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup graham cracker crumbs (about 8 squares)
- 1/4 cup packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 1/2 cups buttermilk
- 1/4 cup vegetable oil
- 3/4 cup semi-sweet chocolate chips
- 1 1/4 cups miniature marshmallows, divided
Recipe
- 1 in a large bowl, combine the dry ingredients.
- 2 combine egg, buttermilk and oil; mix well.
- 3 stir into dry ingredients just until moistened.
- 4 fold in chocolate chips and 1 cup marshmallows.
- 5 fill greased jumbo muffin cups three fourths full.
- 6 sprinkle with remaining marshmallows.
- 7 bake at 375 degrees for 18-20 or until a toothpick comes out clean.
- 8 cool for 5 minutes before removing from pan to wire rack.
- 9 serve warm.
