Safari Pizza With Harissa

Ingredients

- 1 pre-baked pizza crust (such as boboli)
- 2 teaspoons berbere
- 1 teaspoon garlic, minced
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 1 medium chinese eggplant, sliced thick
- 1 small zucchini, sliced thick
- 1 small red onion, sliced thick
- 2 tablespoons olive oil
- 1 tablespoon harissa
- 1 chorizo sausage, sliced
- 6 ounces mozzarella cheese, sliced
Recipe
- 1 mix berbere, garlic and salt with olive oil. coat top of pizza crust with oil mixture; set aside.
- 2 prepare topping:
- 3 place vegetables in a roasting pan; lightly toss with olive oil and harissa to coat.
- 4 roast vegetables for 15-20 minutes.
- 5 remove from oven and let cool.
- 6 arrange cheese, sausage and vegetables on pizza crust.
- 7 bake in preheated oven at 350°f for 10 minutes.
- 8 remove from oven and serve hot.
- 9 sprinkle with more harissa if desired.
