Safari Pizza With Harissa

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 pre-baked pizza crust (such as boboli)
  • 2 teaspoons berbere
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium chinese eggplant, sliced thick
  • 1 small zucchini, sliced thick
  • 1 small red onion, sliced thick
  • 2 tablespoons olive oil
  • 1 tablespoon harissa
  • 1 chorizo sausage, sliced
  • 6 ounces mozzarella cheese, sliced

Recipe

  • 1 mix berbere, garlic and salt with olive oil. coat top of pizza crust with oil mixture; set aside.
  • 2 prepare topping:
  • 3 place vegetables in a roasting pan; lightly toss with olive oil and harissa to coat.
  • 4 roast vegetables for 15-20 minutes.
  • 5 remove from oven and let cool.
  • 6 arrange cheese, sausage and vegetables on pizza crust.
  • 7 bake in preheated oven at 350°f for 10 minutes.
  • 8 remove from oven and serve hot.
  • 9 sprinkle with more harissa if desired.
