Rosie's Chicken And Lamb Adobo

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 tablespoons oil
  • 1 large onion, sliced and divided
  • 1 medium tomato, chopped
  • 2 -3 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon peppercorn
  • 1 lb lamb, cut into cubes ((or more)
  • 2 tablespoons white vinegar
  • 1/2 cup soy sauce (low sodium is best)
  • 1 teaspoon ground pepper
  • 1 lb boneless chicken thighs ((or more)

Recipe

  • 1 saute onion, tomato,garlic, bay leaves and peppercorns in oil til onions are soft.
  • 2 add lamb.
  • 3 pour vinegar and soy sauce over the top and bring to a boil then simmer about 30 minute covered.
  • 4 add chicken and layer remaining onions on top.
  • 5 simmer until chicken is done.
